My love of vegetables and my hatred of processed food led me to the quest for the perfect homemade meatless burgers. This is my newest recipe, created in my kitchen and eaten for lunch today. Happy tummies all around.
Makes 5 meatless burgers.
Ingredients
1/2 cup various bell peppers diced
1/4 cup of onion diced
clove of garlic diced
2 lemon wedges
2 apples grated
5 Tablespoons flaxseed (ground to powder)
1/2 Cup dry quinoa (cooked)
Goat cheese or cheddar cheese
Whole wheat buns
Oil
Arugula
Begin by putting a bit of oil in a pan. On medium heat cook the garlic for a minute or two before adding the onions. Cook the onions for a minute or two before you add the peppers and then cook it all for about three more minutes. Remove from heat and cool.
Shred two apples using a cheese shredder, it almost resembles raw meat. Squeeze two lemon wedges into the apples shreds and mix with a spoon, then drain excess moisture.
Add cooked quinoa, flaxseed, cooked veggies and salt and pepper to taste to the shredded apples then form into patties. Bake at 375° for 15 minutes on either side or cook in a pan on medium heat for the same amount of time.
Meatless burgers are delicate so be careful when flipping, I used two spatulas, one on top and one on bottom.
Top with goat cheese (or cheddar cheese) and arugula, and use a whole grain bun for good measure!
This meatless burger is good eaten cold on top of a salad as well!
