Hodgepodge Dinner And A Brand New Apron

After drinking all night at a comedy and burlesque show where Screaming Names played until almost 3am, we woke up late and had a heavy lunch to help absorb the alcohol. We went to The Dog of Nashville where I had the special, an around the world dog. A Wisconsin beer brat with sauerkraut and spicy mustard, a light german beer that I can’t remember the name of and we shared chili cheese fries. Dinner was going to have to consist of something with some actual ingredients.

I need to go grocery shopping, but I knew that I could make dinner from the few things that I had in the fridge.

Ingredients

1 large chicken breast, sliced in half horizontally

1 red bell pepper

a few slices of fresh pineapple

1 broccoli crown

garlic

butter

shredded Gruyère

1 cup organic white rice

I chopped the red pepper and the pineapple and then tossed them in a covered oven safe dish with a tablespoon of water. I preheated the oven to 350°, then I separated the broccoli and put it in another oven safe pan, I brushed on a little butter and fresh garlic and then I put both pans in the oven. I made the rice, and cooked the chicken in a frying pan with a little oil, salt and pepper. I cooked the veggies for about 20 minutes before I added the shredded Gruyère to the top of the broccoli and cooked it all for another 10 minutes or so.

Dinner was amazing, and we ate mint chocolate chip ice cream afterwards. I started looking around the craft closet and I pulled out this thing that I sewed years ago and used as a curtain in my kitchen. It was basically 5 squares of fabric sewed together. I pulled the seams out and reworked the whole thing into an adorable little apron, complete with pockets so I can wear it to work if I wish.

None of this happened until after I heard the church bells tell me it was 9 o’clock at night. I was actually impressed that I was able to accomplish so much with the end part of my day, it inspires me!
