It’s Friday folks, just a few more hours until the weekend is officially here.

Last night I went to the soft opening of a new restaurant that I will never go back to. The menu was almost entirely fried food and a waitress didn’t come around for over half an hour. We had drinks from the bar and the food was free so we waited patiently. I actually enjoyed my entrée, I can’t remember the exact name of it but the description said Puerto Rican lasagna. It was the only thing that I could find on the menu that wasn’t pork, fried or stew. Instead of lasagna shells in between the meat, sauce and cheese there were plantains. I had never thought of cooking with plantains before last night, now I’m curious.
